From 2012-2016, I helped transform a local coffee shop's baking program into a robust retail and wholesale bakery that served their multiple locations. Starting as a baker and advancing to General Manager, I oversaw every aspect of building out our dedicated bakery space - from hand-painting the floors to developing comprehensive systems for scaling artisanal bread production. This collection showcases both the technical achievements (including custom spreadsheet systems and production workflows) and the physical transformation of creating a space that balanced craft with growth.
